Bison Gravy using Bison Tallow
Bison Tallow Gravy
Dairy-Free
| Bison Tallow | 4 Tbsp |
| Flour | 4 Tbsp |
| juices from cooking meat, or bison bone broth | 2 cups |
| Sea salt and freshly ground black pepper | To taste |
| Butter if desired |
Instructions:
- Heat the bison tallow in a pan over medium-high heat. When the fat is melted, hot and shimmering, add the flour into the skillet and stir. It should quickly absorb the fat and form a thick paste. Continue to cook, stirring frequently, until the paste becomes golden brown in color and develops a rich aroma.
- Pour in the meat cooking liquid or bone broth ½ cup at a time. Whisk the liquid in until smooth. Bring the mixture to a boil, then reduce to a simmer and cook for about 2 minutes. Season with sea salt and freshly ground black pepper to taste.
- If desired, stir in about a tablespoon of grass fed butter for added flavor and silky texture.
- Serve and enjoy with your favourite meal!
